Unpasteurized (raw) milk and products made from it can carry Listeria, E. coli, and Salmonella, and selling or even keeping them is prohibited in a NYC food establishment. The inspector looks for raw-milk products in storage and in use. Remove and discard anything that is not labeled pasteurized. Public health hazard, cited at 10 points.

Read dairy labels in the walk-in and behind the bar. Everything must say pasteurized. Any raw/unpasteurized milk or milk product on hand = flag it.

Purchase only pasteurized dairy from approved suppliers; verify pasteurization on receipt.

- ✓Check the 'pasteurized' wording on the label at receiving for milk, cream, and soft cheeses.
- ✓Do not keep raw-milk products on the premises even for personal use.
- ✓Verify that specialty or imported cheeses are made from pasteurized milk before stocking them.
